Full of Green: What I Ate Wednesday 4.8.2015

Happy HuMp Day!!

I don't know about you but I am more than ready for this week to be over. My body is feeling tired and worn out from the traveling last week to DC. Also I feel like I'm beginning to get a sore throat so I've been loading up on a bunch of greens, ginger tea and water because I am not in the mood to get sick anytime soon. Keeping my fingers crossed that all this helps!

Despite being tired from my flight on Saturday I managed to meal prep on Sunday because I knew I would be completely tempted to reach for those foods that make me feel sluggish. Meal prep is a life saver for me so I usually always eat the same main meals for the entire week but I like to "spice" things up with my snacks :)

For my very first What I Ate Wednesday my food was FULL of green!

Post work out Green Smoothie
Woke up and headed to the gym to do some morning cardio. Post work out Breakfast #1 was a green smoothie made with 1/2 scoop of Nature of Life Vanilla Protein Powder, half a banana, frozen spinach and a cup of cashew milk. Seriously obsessed with cashew milk at the moment. It's a lot creamier than almond milk and has a more flavor in my opinion. Drank this green monster on my way to work.

Kale Salad
Once I got settled in at work I ate Breakfast #2 which was a kale salad massaged with lemon and topped with some avocado, kabocha squash, 1/4 cup of quinoa and an egg white scramble. My body responds best with a protein + vegetable heavy breakfast. These types of breakfasts leave me feeling refreshed and energized to start my day. Not pictured includes multiple cups of hazelnut coffee, the one addiction that I cannot seem to give up!

I don't have lunch until 1 pm so I always have to have a snack in between breakfast and lunch. Today I had some sliced almonds and cashews because I cannot get enough of cashews and I love my fats.

Ginger Lemon Lentils
Steamed veggies + chicken (not pictured)
For lunch this week  I made a big batch of The Real Life Rd recipe for Ginger Lemon Lentils paired with some steamed veggies, some not pictured chicken and the rest of my avocado from this morning. This was my first time making lentils and they were ohhh sooo good. Didn't have red lentils like the recipe calls for but I swapped them with red lentils and it worked out perfectly. Definitely recommend you trying out this recipe since it's simple, delicious and can be easily frozen for later days. A perfect meal prep meal!  Fats, protein, carbs and veggies are all accounted for in this lunch.

Afternoon snack of carrots

Ever since I came back from vacation last week and all the delicious eats I had, my body has been craving nothing but giant bowls of salad and vegetables. So who am I to deny it what it wants?!?
ENORMOUS Salad
For dinner I had a spinach salad with asparagus, sweet potato, mushrooms a hidden egg white scramble and copious amount of nutritional yeast. Not ashamed to admit that I quickly devoured this salad. So good and filing that I have been eating this same dinner for the past two weeks. I like to broil the asparagus, mushroom and sweet potato tossed  with some curry and onion powder for a couple a minutes so that they get nice and crispy. Try it out and let me know how it goes.

Frozen Fruit + Fresh Straberries

Popcorn
SNACKS, SNACKS AND MORE SNACKS. I can't go to bed without snacking on something after dinner. Lately I have been on a popcorn kick. I melt a some coconut oil and toss in the kernels, once all the kernels have popped I like to toss it with nutritional yeast, cinnamon or eat it plain like i did last night. For my sweet tooth craving I munched on some frozen mango, frozen pineapple and sliced strawberries. Not pictured included a handful of cashews because the addiction is real and like I said I love my fats.

Dear Diary-2

I’ve come to the realization that I will never really be consistent with the whole “blog” thing and that’s ok with me. I kind of treat this like my personal diary even though I do have an actual “diary” that I write in every day. More so like a gratitude journal. As much as I want to write everything that I am feeling and thinking, these thoughts are very fragmented and random that it just does not work for me. Half the time I’m day dreaming about far off places that I want to travel, things I want to eat or replay scenarios that happened. I mean the internal monologues that I have are kind of ridiculous but kind of keep me sane since I tend to be a lone wolf and genuinely don’t know anybody that would tolerate all my thoughts, worries and scenarios. Lately I’ve been in this really weird funk of a mood and it all stems from this comparison trap that I fall into. You would think that at 26 years old I would be wise and experienced enough to know that nothing good comes fr...

Let's talk about my first time at the "House"

So I was cleaning out my drive and lo and behold I find this little gem. I wrote this little gem back in college and it's pretty cool seeing how much of an impact my Roscoe's Chicken and Waffles experience mad on me. I want to say that this was what sparked my love for pairing different flavors together. Enjoy!! Leaving the fog dense city of Westwood a band of brothers ensued on a journey to discover the marriage of chicken and waffles that has so many Los Angeles residents relishing in taste bud heaven. Like many on this trip, this would be my first time visiting The House of Chicken and Waffles.Jittering with excitement I sputtered a stream of questions to a veteran of this establishment: How exactly do I order? Is there anything else on the menu? Do I eat the chicken and waffles together in one bite or separately? I continued like a broken record player until we arrived at our destination, my car mates joyfully springing from their seats relishing the opportunity to put a...

Weight Loss: A Brief History

March 2014 November 2013. You know how when someone changes their life drastically you often wonder what their "Aahhhaaa"  moment must have been? Well mine came one day in August 2013 while I had just finished eating an entire bag of Hot Cheeto puffs. It was hot, humid  and I remember wearing an old cheer tank top. I looked down and felt utterly gross as I saw my belly fat and flabby arms beading with sweat. I don't know why  but a feeling of self loathing rushed upon me, not because of how I looked but  for allowing myself to become  the person that had just finished eating an entire bag of Hot Cheetos  without being hungry in the first place. Emotional eating had become the norm. June 2014 August 2014   SMALL. I started very small. My goal was to go an entire week without eating hot cheetos (yeah those suckers had me hooked like no other). Needless to say I relapsed. The addiction was too strong. But I was DETERMINED to prove to m...
